There’s one thing extremely comforting a few easy khichdi. It’s healthful, simple to digest, and at all times appears like a hug in a bowl. This Moong Quinoa Khichdi is my nourishing twist on the normal recipe—bringing collectively the goodness of sprouted moong and protein-rich quinoa for a meal that’s each gentle and satisfying.

A healthful, protein-rich one-pot meal made with sprouted moong and quinoa
Wash and soak quinoa for two hours. Drain and hold apart.
Warmth a strain cooker and add ghee.
Add cumin seeds, garlic, and inexperienced chillies. Sauté for just a few seconds.
Add chopped onion and sauté until it turns translucent.
Add tomato and cook dinner for a minute.
Combine in turmeric powder, purple chilli powder, cumin-coriander powder, and garam masala.
Add sprouted moong and the soaked quinoa. Season with salt and blend properly.
Pour in 3 cups of water, stir, and shut the lid.
Stress cook dinner for 4–5 whistles.
As soon as the strain releases, open the lid, fluff the khichdi, and garnish with recent coriander leaves.
Serve sizzling with curd, papad,or pickle for a comforting meal.
